Rita Haldeman, the Herald-Banner's advertising director, shares one of her favorite holiday recipes: Turkey Brine Mixture, which gives the turkey a delicious flavor.
1 cup of Coarse Sea Salt
½ cup of brown sugar
1 Tablespoon of sweetened, dried, finely chopped cransberries
1 Tablespoon of Orange Zest
1 Tablespoon of dried, chopped apples
½ teaspoon of thyme
½ teaspoon of rosemary
½ teaspoon of sage
1/8 teaspoon of garlic powder
3 shakes of red pepper flakes
Combine all dry ingredients and add mix to one gallon of boiling water.
Cool thoroughly.
Place 18-20 pound turkey in a very large container that contains the brine and cover.
Keep turkey in the refrigerator or on ice from 12 to 24 hours.
Remove turkey from brine soak and rinse well with cold water.
Pat dry and roast turkey as you normally would.
